The New Orleans Saints got their name from the Dixieland Song 'When the Saints go Marching in'.  As New Orleans is renown for its Jazz and Dixieland music, it had a nice ring to it (the former Basketball team was the New Orleans Jazz - get the pattern?).  So no one really complained or yelled about it being derogatory to Saints who no longer could defend themselves or speak up for themselves in the press.
